So I shot an entire commercial on an iPhone XS Max.

I watch a ton of lifestyle videos on youtube that are almost all filmed with gopro-style cameras or phones on cheap gimbals. This looks exactly like them, and what I mean by that is that is that the sky always looks unnatural with cell phones or cheaper cameras (00:11+ in your video is a great example the sky goes from a very light blue or white to nearly black in just a couple of seconds). I don't know the technical description here, but better sensors seem to handle varying light levels better. You are obviously focusing on your subject, and so is the camera, so things in the background don't look that good. Also, these handheld stabilizers have some tells with the way they move.

I am really nitpicking here, it looks good and 5-7 years ago you would have spent $10,000 on a camera, lens and gimbal to shoot something like this.
