haha, been there... I started two of the three clubs at my school. Just bear in mind potential membership.... starting a club with only three members will limit how much impact /leadership you can demonstrate.

opportunities exist everywhere in your community.... they'll just be unconventional for typical high schoolers (and that's a huge advantage in elite admissions). Looking at the other rural kids I've met at my Ivy.... their activities ranged from union activism at a chicken processing plant to winning an election for county public office (impossible in say New York City, but still an option for us rural folk!) Personally, I started competing at the local rodeo.... just to add a little local flavor to my applications, lol.
