Nope not all religions work that way. Not all religions have a centralized text. And not all religions treat that centralized text as completely infallible. Islam is an example of a religion that has a single book that must be followed to the letter which is the Quran and all of the other books within the Canon are up to interpretation. The Bible is different and it's not treated as the direct word of God but instead treated as man writing down the word of god.

A Christian who doesn't follow everything to the letter is still a Christian as long as they believe that Jesus Christ is Lord. And also believes in the trinity.

Some people treat their holy text as more of a series of lessons that they have to understand rather than things that literally happened.

Daoism and is an example of a religion that doesn't have a centralized text. You might be thinking of the daodejin but that's just one of many Taoist texts and it is not claimed to be a centralized authority.

You have to remember that the religions that are chill, not in your face, and are not annoying are busy not being annoying. These religions are also very small.
