Why is it that some people feel offended or feel that I'm angry when I just tell them how I feel about things?

Well, my condolences to you. People should be a bit more thoughtful about what they ask.

And yeah, I can be pretty sensitive, but I try my best to have justifications for it. For instance, I hate it when people ask me how much money I make. These things people ask aren't personal in the sense that it's about an underlying physical or mental issue. It's just bare-bones personal, like how much money I make, where I work, where I live, etc.

I don't know why some people just don't know when not to ask about stuff.

I agree, but, even if they do ask, if I say that I'd rather not say because it's personal, it should be easy enough to leave it at that. By escalating it to what they believe is meant to be ill will towards them, they're creating an issue literally from thin air. It sucks.
