I'm the same way. Here's a bunch of stuff that helps me:

I use a mix of quick, possible more boring meals and cooking big batches so it lasts for at least 2 meals. That keeps breaking it up so neither the meals nor the preparation time get too monotonous. Occasionally takeout if I have the money for it and really don't feel like making anything.

Today I'll make sweet potato wedges with garlic cream and maybe a little salad. Preparation wise it doesn't take more than 20 minutes. I set alarms for everything so I don't stress out about baking times or getting distracted and letting the food burn. I have a list on my phone containing all the meals I like to make so I don't stress out about coming up with stuff. Occasionally I'll learn something new. I know how much work they take anyway but I could sort the list by time/effort. Lastly, I plan my meal times into my calendar. Every evening I write a plan for the next day, including when I'll have breakfast and dinner (lunch turned out to be too hard to plan for me so I'll eat fruit, veggies, nuts and quick snacks). That way I don't end up cooking at 10pm. I include buffer time because with ADHD it's harder to jump from task to task.
