Struggle to eat my prep food?

OK, I've got a mini-rant and some wall of text about cooking and meal prep and using recipes to prep entire meals ahead of time.... I hope this is helpful for you and not just cathartic for me :)

I think learning individual recipes is a crutch - if you learn cooking techniques and apply them to ingredients you like and can half-prep ahead if needed, you'll be a better cook and you'll like your food much better too because you'll know how to make it the way YOU like it. Invest in your health and take a few cooking classes that teach you actual techniques, not just recipes. End rant!

What I do is choose ingredients I like and "half prep" them into a quickly usable form that will also hold up well in the fridge. I strongly recommend Melissa Joulwan's paleo cookbook for good instructions on how to do this, and most of her tips are keto friendly.

If examples help you - this what I prepped yesterday to feed me and my spouse for 3+ days: 1. Shredded chicken (from 2 whole chickens) 2. Kale 3. Bell peppers 4. Chicken broth (from the chickens) 5. Herbs (in my garden) 6. Eggs 7. Cauliflower 8. Essential pantry items - various sauces, spices, oils, etc.

From this, I can make within 15 minutes:

A. Soup (a few different kinds possible) B. Stir fry (a few different kinds possible) C. Fajitas (no tortilla, obv) D. Warm salad E. Hash (use cauliflower instead of potatoes) F. Roasted "hash" (I use the broiler if I'm short on time) G. Cold salad H. Bento box dinner (cauliflower as rice)
