Struggling hardcore with my diet

I'd be grateful for any advice you could share to help my family get back to more plant based eating it as since my youngest was born and my IBS got worse it has seemed nearly impossible. One issue is stacking - so I can eat 1/4 courgette or maybe 10 green beans but then no more for hours but breastfeeding 2 children means I need to eat more. I can't have onions, garlic, apples, pears, avocado, blackberries any stone fruit (peach, plum, apricot, cherries etc), cauliflower, sweet potato, no peas. No beans, no lentils and no chickpeas. No mushrooms.No wheat. Because of allergies we can't have carrots, fennel, parsnips, coriander, parsley, nuts or seeds, also nightshades so tomato, potato and aubergine. No rice. No soy products.

Small amounts of oats and coconut stuff is okay. Lettuce and cucumber and most cabbage/ kale quinoa. So lots of overnight oats

As someone who used to live off falafel, tabuleh and Dahl & tidy stir fry this has been a nightmare to get my head around and keep my strength up. No worries if you don't have time.
