Thinking of playing either OC or SoU + HotU - any good Melee builds?

What type of build and play style are you looking for? There are lots of options.

Weapon Master is great at offensive. They get crit range and crit multipliers, so can do tons of damage.

Dwarven Defender is great at defense.

If you like Magic, then a War Cleric (with 4 levels of Fighter or COT) is a great melee build, with buffs and heals and even some offensive magic.

If you like to sneak, you could do Fighter/Rogue (or WM/Rogue). That gets you big damage on sneak attacks.

Ranger and Paldians are mid tier. They can do good melee damage, some defense and a small spell book.

Rangers get stealth (but no sneak attack), a pet and favored enemy (slightly better damage) and Paldian can gets Divine Feats (+ damage and +AC) if you put points into Chasima, plus some save bonuses and bonuses against undead and evil.

Halbred is a decent weapon. Other options would be dual weapon or double weapons (more attacks per round) or One handed + shield (for more defense). Two handed weapons will get 4 base attacks (plus haste) and gets bonus to damage, so will be able to do big hits. If your AB is high enough, you could also do Power Attack to add more damage (and or Divine might if Paladin with Cha).

You could also mix and match. A Fighter/DD/WM with Halbred would have lots of damage and reasonable defense (saves would be kind of wishy-washy). The downside is it would require a lot of feats and pre-planning the build.
