Sunday: Everything here is pretty standard fare. Observe my deep and enduring love for carbs lol.
The tortillas are La Tortilla Factory's Low Carb Whole Wheat Tortillas, 50 calories apiece.
The bun is the lowest I could find, Franz Whole Wheat Bun for 130 calories.
White Cheddar Corn Puffs are from Trader Joe's.
I also cooked up some braised short ribs and a chickpea stew for this week's lunch.
Monday:
The cream cheese was a seasonal product from Trader Joe's, and I'm almost out :'(
Spicy Chickpea Stew recipe is from here, although I subbed sweet potato for butternut squash, and diced tomatoes with tomato sauce for crushed tomatoes. I also left out a couple of ingredients, like the harissa and parsley.
Braised Short Ribs recipe is from here, although I left out the port and used all red wine instead, and put in a ton less olive oil.
Dinner was a lot of food for 280 calories! The cod I rubbed with different spices and cooked on the stove in some bacon fat.
Tuesday:
Fig butter is from Trader Joe's. I sprinkled some edible flowers over it because...I'm not sure why I bought them in the first place and they were starting to dry up.
Yay, Dave's Killer Bread now makes thin-sliced lower calorie bread! I got their Powerseed, which is 60 calories per slice. I mixed avocado and sun-dried tomato pesto together and spread it on top.
I wanted to make an open-faced sandwich with the bread but also had to use up the rest of yesterday's cod fillet, so I wrapped the cod in bacon and baked it in the oven. Baked for about 15 minutes at 425, then I took it out and seared it quickly in the pan, just to crisp up the bacon. Plopped it on top of sliced radishes, spinach, and the bread.
