Is it time to give up if I only weigh 115 lbs at 5’11”?

First of all I think you should set a more reasonable goal that’ll be easier for you to maintain long-term. I’m the same age as you, about the same height and weigh more than you but can gain weight with 2400 calories. You could probably gain with even less due to your lack of muscle mass. Look up some TDEE calculators online and add 350-500 calories to whatever number you get.

My best advice to get those calories in would be to eat as often as you can throughout the day. I know you mentioned you struggle with eating early and late but get some food in as early as you can and then constantly be eating throughout the day (set a reminder on your phone for every hour if you have to).

At this point don’t fixate on how “clean” you’re eating, you just need to get out of starvation territory. Eating high amounts of protein is going to be hard as it makes you feel full quickly so don’t be afraid to eat more carbs, fat and even some junky food. Calorie dense foods like PB&J’s should be your best friend.

Finally, it gets easier the longer you do it. Your stomach will expand and your body will adapt to eating more food so keep at it. Keep tracking food with MyFitnessPal, track your weight and make sure it’s increasing week to week. If your weight gain stalls, add more calories.

It’s a marathon, not a sprint. Don’t get discouraged. Taking control of your body and being able to lose and gain weight when you want is a powerful feeling and it’s dead simple once you get the hang of it.

Oh also limit the amount of cardio you’re doing.
