Too late to get into ESO? What's the future of the game look like? Convince me to buy?

It's nowhere near to late. The future looks good honeslty. Thieves guild is incoming, along with other expansion material in 2016, updates are regular for the game so far, and hopefully some information on the Brotherhood soon as well. It's way more solo friendly than most MMO's I've played, so you can easily chill at night and progress by yourself, you won't have an issue with that. I haven't tried the PvP yet, so no comment. Collection, there are lots of in game achievements that can keep you busy there, and collecting Dyes is something I personally enjoy for customization. Skyshards can add up to give you skill points, so you'll want to collect those. Mages guild books are something else you'll want to hunt down and collect for their benefits. Dungeons have matchmaking, if you don't have any friends to leg it with in them. Keyboard chat is finally coming to the game on PS4, no more having to rely on voice area chat and hear screaming kids constantly. That is muteable atm, so if that's something you don't want to hear, no worries there. I don't remember the details on when Keyboard chat is coming, and yes it has a future. My suggestion, I'd get the Imperial edition if possible. The free mount is useful vs in game mount costs, being able to re-style things to the imperial style for free can make them look nicer sometimes, and well yeah free Imperial class. Mudcrab pet, even tho I use my polar bear cub now......I still love my Mudcrab. I don't know if Imperial Editions now are sold with the any race any faction dlc (I got mine on Imperial Edition Physical pre-order w/Amazon, so I'm not much help here) but if that's included it's also nice to have. I'm not sure if the treasure maps I had came with pre-order or Imperial Edition (I don't remember these things, sorry) but they can be useful for getting some decent loot early on, along with the loot you can farm from the World Bosses. I say take the dive, prices have dropped a good bit, and sales have been going on regularly for the multiple version of the game. So it's not a bad time to consider it. The sub is not necessary at all, and you'll never feel obligated for any reason to pay it, so don't let people fool you by complaining that it has an optional subscription. Crowns have gone on sale a few times since November, so if they were to go on sale again you could get both expansions for the game that are currently out for $20 if you decide you like the game and don't mind waiting out a sale. I hope all this info helps. I'd offer to ask any other question you have, but be warned, I'm honestly not the best person to answer much more. My highest of 3 characters, is still only leveled to in the 30's and I haven't played as much as I'd like to have played since launch. Friends kept dragging me on other game way to much, and pre-orders piled up all over the entertainment center at a few points. I have started getting back on recently tho, and I can say I've seen the differences the updates continue to make. Good luck!
