Why do vegans attract such hatred?

I think it's a side symptom of denial. They know on some level that veganism is the less cruel, more healthy, more enviornmental way to live but they're "addiction" lies in their habits. Family dinners, holiday celebrations. All those memories based on things they didn't consider before you just reminded them that they do exist. They deny it because they feel guilty and denying guilt is easier than accepting it. So there you go. People hate vegans because they represent a version of themselves they don't believe they can reach.

I hope that helped you in anyway to cope. All I do is trying to remind myself of that because it seems that hoping they will one day see that accepting it and moving on is the same as getting out of their own (and all vegans and animals) way and archieving to be the person they actually would like to be.
