We've done the Disney/theme park thing to death... Please help us figure out an adventure for next year.

Well, it's hard to suggest something, since almost anything is possible apart from backpacking through uncharted territory, so I'm just gonna throw out where I traveled with my family when I was a kid.

We once went on an organized tour through Yucatan, and I really enjoyed it. I found the sites (Chichen Itza, etc.) really interesting, even as a teen. I'm sure you could do it outside of an organized tour as a family as well, but you probably know more about Mexico than I do.

You could also consider Christmas or New Years in (Central Europe). It's not a super different culture, but European Christmas markets are different from what I've seen around Christmas in the US. A little bit of sightseeing, museums on the side. Maybe visit two or three cities, on of the in the snowy Alps? Many European cities have pretty big New Year's eves celebrations too. Even if you want to avoid large crowds, the firework can usually be seen from more remote spots.

Europe has the benefit of being very safe and you wouldn't need to worry about tourist scams. Your son could even communicate wit the locals, as most Europeans speak at least basic English. The downside of Europe would be the price. Depending on airfare, $5000 can be gone quickly, considering three people.

Of course, you can go anywhere in Europe during off season, and you don't need to bike. Renting cars is a thing here. ;) Personally, I find Portugal very nice, and it's definitely on the cheaper side of European countries. Don't know about any exciting festivals there, but google a little. Lisbon is a beautiful city, and the Algrave coast is famous.

Other than that, I can say that SEA, especially Thailand, is perfectly safe to travel for a family. Don't worry too much about scams. Yes, they can happen, but worst case you burn $30 bucks on an "authentic antique Buddha", made in China. ;) Thailand is very safe, great tourist infrastructure and you can travel it on any budget of your choice, from ultra-cheap to luxurious. You could spend a few days in BKK, and then go to a quiet-ish family-friendly island. Lots to discover (food, temples, nature), and definitely a different culture.
