What are you all doing to bulk up food, reduce waste, and stretch your grocery budget amidst the quarantine?

sorry about the job loss. I'm just cheap / always trying to sneak in more veggies, here's what i do, in addition to the usual recommendations to just eat more rice and beans you see on /r/eatcheapandhealthy:

- Double the amount of onions, carrots, breadcrumbs in any dish to be honest, your family probably won't notice :p If ground meat is expensive, see if you can replace it with another meat you can pull instead (eg pork shoulder).

- pick recipes around what's cheap and available. Cabbage and carrots are cheaper than lettuce and tomatoes, so I'm doing a lot of coleslaws, stews, curries, stirfries. No one's the wiser unless I mention it.

- if you don't mind the texture, overcook the pasta, and leave the pasta in your stews overnight. they'll bulk up a lot and then you can add even more water. same goes for congee vs rice, oatmeal vs granola, etc. Fiber is more filling than simple carbs, so if it's the same price, opt for the brown or whole grain version.

- substitute expensive veggies with cheaper ones with a similar texture. I usually replace kale with frozen spinach, canned tomatoes over red peppers, etc. sometimes it's noticeable but ok :p
