What are your favorite “I’m dead tired but must eat at home” meals?

mine is definitely pesto (basil, pine nuts, garlic, olive oil, salt, parmigiano). takes about 5 minutes to prepare. i used to make it in a blender, but some time ago i discovered the old italian ways of mortar and pestle.. that's just some next level taste! buuuut it's pasta, sorry ;) try it anyway! you can also add some green beans and potatoes like they do in genoa..

otherwise, fish and peas (both out of the freezer) with potatoes are a go-to for me (bonus points for homemade aioli).

also potatoes, throw them in the blender with a lot of water, blend until they are small chunks, drain really well, add salt, pepper, one egg, mix and throw it in a pan until golden brown on the bottom. flip, repeat, serve with salad.
