What common cooking mistakes do amateurs routinely make?

I fucked up pretty bad back in middle school. I watched that episode of Bill Nye where he shows you how to make rock candy and I wanted to try it when I got home. I started the process, went upstairs to play video games because I thought it would take awhile, next thing I know the smoke alarm kicks off and my step dad is screaming at me from the top of his lungs from the bottom of the stairs. I ran down and it was literal hell on earth. This charred demon spawn that was crawling out of the pot looked like a black cloud of death. The entire kitchen was filled with thick black smoke and the ceiling above the stove was also completely black. The smell was rancid, everything about that experience still haunts me to this day. Needless to say I never leave the stove unattended ever again.
