What foods am I missing? And where can I find a solid list of essential supplies?

Since you're gonna have a really hard time stockpiling enough water or fuel in an apartment, I'd strongly recommend not building your stockpile around water- and fuel-intensive foods, such as rice or beans.

This is just that one piece of prepper lore that drives me nuts. Yes, it makes sense to have 200 lbs of rice if you own a forested rural property with a creek flowing through the middle. It's cheap and versatile. (Although even then, rice is not great if you need to evacuate, or if you're bedridden with an injury or a disease, etc.)

But it definitely, positively doesn't make any sense in a setting where every gallon of water and every pound of propane may be precious if there's ever an outage.
