That's not true when you consider the mass of the entire plant that the bean, nut, grain, whatever grew from. Of course just the bean itself, the endosperm itself is more efficient. in water consumption. It'd be as if I discounted what went in to growing the bones of the animal when discussing the yield of meat. Secondly, water consumption is a regional concern, not a global one. The amount of water on and in this planet is always constant. So if you're raising grass-fed cattle in a place where you have more water than you need for the grass then it's as close to a passive non-issue as you get in farming.
