What to do when hitting the wall (metaphorical, not literal), during a renovation? The frustrations and difficulty are starting to get to me and I just want a normal house already.

I definitely agree with the other comments advising you to focus on one room at a time. You don’t have to get each room completely finished, but at least 95% there.

I’ve done a lot of construction, my advice would be do the work yourself for quality, hire the easy stuff out. If it were me I’d do the carpentry, electrical, and plumbing myself. Drywall if it’s patching. If you have a lot of drywall, I’d hire that out. If your painting more than a couple rooms, definitely hire that out... If you have the money.

The thing about contractors, having been in construction for so long... I don’t trust them to do a quality job, not anyone you could afford to hire at least. If you want a good contractor, go to a wealthy (not upper middle class) suburban area and look around for who’s working there.
