What would be a good Europe 'Grand Tour' spread out over 8-weeks?

I have my reasons but I didn't think it would be a good idea to include them, it's TMI probably.

I have a few themes I am sticking with, certain lifelong interests I am exploring.

I read a lot and love good documentaries, this is how this trip started coming together.

I plan to see major cities between natural wonders like Alps and small towns along the Rhine. It makes sense to see London and Paris one after the other to me though.

I'm open to a walking tour if it's not outrageous in price or time commitment, I can leave if I don't like it without losing money.

I've been researching cooking classes in Italy, I'm probably priced out of Paris. I'll have to do more research.

I have put aside about 3 nights in each point on my list on average, plus I have room to subtract/add time as I see fit. Some places need more time, others only need 2 days.

I journal by default, I never go on a trip without a Moleskin. :)

I always take headphones, music enhances traveling for me. Especially classical and movie scores, bands that make songs about certain places.

I have made the itinerary so it fits in a few days of time in nature between major cities. The Alps and the Rhine.
