What's the strongest pokémon a human could beat in a fight?

That's not how this works.

Pokemon are magic, you can't just go around applying normal physics to them and acting as if it overrides their explicitly shown magical rules.

Per the laws of physics, energy can't be created, yet we know for a fact that Pokemon can create energy from nothing, because Arceus created the universe. Clearly, their rules are above the laws of physics, not the other way around.

Magikarp can magically jump over mountains, and just as magically this never does any damage, because that is what is shown and stated. - Whether or not something moving that fast would normally do damage is irrelevant, because Magikarp does not.
