I wish we had a current player count for each game like steam does!

Steam shows current and peak player counts. Nobody ever checks it before they buy a game, though.

If anything, an average buyer willing to look into the game will find something on reddit or on the Steam discussion forums to see if the game is dead.

Even most people on Steam do not do this and will simply look at the reviews on the store page itself.

I highly doubt most people look at the user reviews. Using an equal lack of evidence, I would say most people ignore user reviews on most platformers because they are generally a dumpsterfire of trolling, brigading, or fanboys. Do you have view metrics?

The Xbox/Windows store has reviews, so if a game is dead or dying that will be in the reviews.

Chivalry: MW is dead on Xbox. Yet if I were to take your word, I would learn this from the reviews. Only one review on the front page there mentions it, and indirectly "can be find to hard matches somtimes" (trust me, it's dead).
