I wish it need not have happened in my time

Definitely anecdotal, dawg. Turn about is fair play, but I've worked in a couple restaurants, and what was required of the servers varied. Whether or not you have expediters, bussers, or hosts changed at different places, and one of the places I worked at had the servers making salads and plating desserts too.

Beyond that, typically servers tip out everybody else that does shit for them. Servers do get the lion's share, but you're tipping the whole restaurant rather than your server specifically. Places totally do things differently, but I've never seen a place where servers got to foist off all the responsibilities, AND keep all the tips. I never even saw a place they kept all their tips tbh, and usually they got roped into at least some extra work beyond just handling customers.
