far as i can see, the reason most people use the drag is that it's easier. just easier to accomplish correctly. no other reason.

but what do i know, i only worked as a cook for decades and sharpened my knives and the knives of my collegues.

i'm sure it's just that i have bad technique and not at all that there is in fact a difference in how much material is removed or that the burr building technique just takes more time.

i mean i hear you saying no but you don't seem to have any evidence to the contrary just a feeling?

how about this. you make a video comparing the two techniques after you spend a few years learning the push technique?
