Why isn't Richard Matheson's *I Am Legend* (1954) discussed more in the curriculum?

Yeah this is completely irrelevant to academic/educated taste. It's nice that you read this and everything but it doesn't answer the question why certain types of books are taught as opposed to others. There's a sociological reason that exists independently of certain artistic reasons.

David Foster Wallace taught pop taste and wasnt ashamed. That doesnt mean other works are not good or are only good because certain people say something about them.

You should read the first essay, chapter in the distinction by bourdieu. It's not arguing why a taste is better than another. Its arguing why one class insists on teaching certain works. That's a hugely different question that actually answers the question at hand.
