"Friend" coming over for an extended weekend - $40 - 2 people - 4 days. Help me out here!

Quesadillas for lunch are always delicious. You can change up the fillings, too. I enjoy caramelized onion, spinach, black beans, corn, and smoked cheddar. An onion, a can of beans, a handfull of frozen spinach, hand full of corn, and as much or as little cheese as you want. I usually serve them with sour cream or full fat greek yogurt (whatever I have on hand) and salsa.

Chicken tortilla soup is also easy and cheap to make and delicious. Black beans, corn, onion, I prefer poblano peppers, bell pepper, some masa harina and chicken broth and of course chicken (I suggest thigh meat as it's cheap and more delicious).

Quick chicken fajitas are also cheap and delicious. Marinate your chicken in oil, lime juice, cilantro and garlic, fry up your meat with some bell peppers and onions and throw it on a tortilla with sour cream and a sliced avocado. Alternatively, you could do basic white people tacos, too. Ground beef, shredded lettuce, chopped tomato/salsa, sour cream, tortilla. Bam.

One of my favorite things to eat is also just a simple pot of rice, beans, corn, bell peppers, and tomatoes all cooked down together. You can add meat but its not necessary. Top with cheese and serve with a tortilla.

For breakfast you could make breakfast burritos or breakfast enchiladas or chilaquiles...all cheap stuff.
