what IS the best diet for fatty liver? i have huge issues with digestion, please help!

I know what you mean i follow zerocarb, keto, carnivore, and lowcarb subs and i don't think i could do the first three.
It's not easy, I had a long complicated journey I had gastritis as well so my stomach was burning 24/7, only eating would stop the burning so at one point I was just eating 7 or 8 meals, 2-300 calories each, I wasn't working so it made it plausible.
I was exercising a tonne, too determined to get healthy but I didn't realise at the time there's such a thing as too lean, and I actually became malnourished I lost too much weight too fast,5 stone in 8-10 months during covid lockdowns, i ended up crashing my hormones that's why advise take it slower and include more healthy fats.
Tbh I haven't been low carb for about a year since I started trt and trying to build muscle until recently I've started cutting them down again.
All I can say is it takes time, for some reason now I can just have 3 large eggs and 200g skyr for breakfast at about 6:30 and normally it keeps me going until 10:30-11. Before I would struggle to digest the fat in the eggs and be hungry by 9.

I do find fasting hard, the people on one meal a day I just don't know how? I've tried it and I can't I feel weak and like I'll pass out even though my blood sugar is fine.
About my meals basically I'll just eat a lot of meat most days but something like:

7am- 3-4 eggs, 200g skyr (8 carbs) 10am(normally pre gym)‐ 40g oats, 30g protein powder, blueberries, cacao(25-30 carbs) 1pm- pack of crispy chicken tenders(20 carbs) 4pm- reasonable size steak, a few new potatoes, broccoli(30 carbs) 7pm- 30g protein powder, blueberries, cacao (30 carbs).

So that's just a random day it does vary looking at it makes me think it's probably not enough for me. Works out 120ish carbs, technically low carb but it's not one size fits all and this is me exercising and building muscle without putting too much fat on at the same time whether it's visceral or body fat, some days i eat more carbs some less, i do normally have the yoghurt type meal before bed but not always.

For better tips on eating less carbs probably take a look at the subs I mentioned, my body is weird, it just takes a while to figure out what you can/can't handle and slowly try to lower carbs, eat less frequently, over time, some people jump straight into keto and are fine some aren't. I always had this thing that the more veg the better but for me too much fibre still makes my stomach hurt.

Sorry for all these long explanations not even sure I answered your question but you get the point i just eat when I'm hungry but eat healthy, mostly non processed if i can or at least not highly processed(not sure what whey protein counts as btw I've only recently been using it but i can't drink it for some reason), keep protein high, moderate carbs and good fats with a fair bit of walking, 15-20,000 steps some cardio here and there which mainly i include in the steps i just go at an incline a bit faster, and strength training, sip water all day.
