It wasn't solid rock, nor was it bent. And there is a great difference in density between helium and rock.

earth is a "ball", yet hi-altitude photos (shot without fish eye cameras) show earth as being flat as a marble floor.

It depends upon the distance from the mountain. The higher the mountain, the farther it can be seen from. The smaller it is, the shorter it can be seen from.

It's really not that complicated.

water at rest always maintains a flat level. Yet on the ball earth model, water magically curves, because of earths mighty"gravity".

It seems like it is flat, but it is not. And it isn't magic.

Earths gravity supposedly causes the oceans to curve over the earth and keeps the oceans from spilling away, yet "gravity" cannot prevent water vapor from rising upwards.

Water vapor has a much lower density than liquid water. And most of the water vapor that floats around stays here on Earth. Not much actually leaves compared to how much stays.

The higher you ascend, the stronger the spin.

That is a huge over-simplification and is just plain inaccurate.

Yet, clouds stay motionless

Dude...

and planes and helicopters can fly without being affected by the spin of the atmosphere.

They are effected, it's just impossible to observe without equipment.
