7 Days to Die with the Darkness Falls mod is one of my favorite survival games out there. Turn off the blood moon setting so that base building isn't as important and you're good to go. I also had a great time with Terraria, it's one of my favorites in the genre. Valheim is great too, although it ends abruptly because the game is missing content. The Forest is pretty good -- progression feels great. Right now I'm playing Grounded and would recommend it as well, but it does have a lot of things that don't seem to respect my time (a bit too grindy in some aspects, or very low respawn rates). Oh, and Project Zomboid is surprisingly good, and you can totally survive without much of a base.

If you want a single player game, you could check out Subnautica. Darkwood is a single-player horror survival which is really spooky but also something worth trying out if you're into that stuff.
