Do the heel brakes make a big impact on how I skate ?

I don’t use a heel brake, but I don’t see how removing it would change anything about how you skate. I’d think adding one after being used to not having one would be a potentially harder adjustment to make.

My advice, if you remove it, would be to just be sure you can stop as well without it, or just know your limits without it and dial it back until you’re comfortable. Basically, don’t put yourself in a situation where you require the brake, but it’s not there.

The other thing to know is that people in this sub will act like having a heel brake is objectively wrong or dangerous. Again, I don’t use a heel brake, but I think these people are wrong. I recently did a group skate with several good, experienced skaters that used heel brakes and have been for years and years. There’s nothing wrong with using a heel brake. It’s your preference.
