Ok help me figure this out while some games are on sale... something like Dayz?(which version? mod or standalone?), Miscreated? Rust? etc..

I'm on the edge of purchasing Miscreated also. I've watched a few recent videos and it looks somewhat decent. From what I can see it looks more PvP than PvE (unless you play low population servers, not sure if there is PvE servers). Weapon loots are very rare. Building is freeform and seems to be the biggest point the developers are trying to say for the game. Controls are simple. UI is simple. Crafting is simple. It looks like what H1Z1 could of been.

Rust is recommend to play with a group of people as you'll be quickly killed. Controls are simple. UI is simple. Crafting is simple. People have said the building is the best in Rust but I don't play it much but the community is toxic as people are saying. Battle Royale is really fun though.

7 Days to Die might suit you for challenging as hordes come every 7 days and requires teamwork to survive. Controls are a little bit clunky. UI is straightforward. Crafting is simple too. Multiplayer, I haven't really touched it but it looks like it's mostly PvE and players are usually friendly and won't KoS but the developers are focusing single-player so multiplayer might be buggy with tons of people.

Minecraft might be the best game your looking for but chances are you've already played it.

Unturned is right now my go-to survival game. If you can look past the simple graphics then it's a fun game. The community is a toxic as any free-to-play games. Weapon customization/attachments are awesome. Freeform building and makeshift vehicles, helicopters, and boats! Controls are really simple and doesn't feel clunky like 7DTD. UI is really simple with your health, stamina, food, etc on the left bottom. It has Workshop so there's always new maps to play.
