If you've only watched each episode once then the good part of the journey is still ahead of you. You will likely have forgotten a ton of episodes and plot points. You can go back and watch episodes while catching things you missed, connecting dots and exploring the universe. You just went through a ton of content and didn't really get a chance to absorb and understand it on a deep level. I would recommend watching random episodes. Simulate the re-run effect rather than binge the shows from start to finish. Bouncing around will let you see a wider range of episodes and content in a short period of time. Watching it this way works very well with Star Trek's procedural nature.
