I used to be the sys admin for a 1200 camera system. Current employer has 1350. The good news is, you have cat5 going to the camera location. So if you want to upgrade from analog to IP, the necessary wiring is likely already in place. The bad news is you will need new terminations to connect the cameras to. That requires the tool, the rj45 connectors, and the knowledge to make the terminations correctly. There are tons of videos online. Look at some of them, see what you think. Put together a list of questions you have and you can message me directly thru here if you need to. It's all low voltage. You won't hurt an IP camera if you mess up a connection. It just won't work.
