The advice for both jobs is the same. Be magnanimous, act servile, talk up your coworkers, downplay back-of-house drama or issues.

You are in a situation where you may need to treat your customers as the pinnacle of taste and positivity. It might suck sometimes. I hope you are prepared to enter a job where you are necessarily a person who serves the whims of others. It's not always easy to do so. When I've waited and cooked at high-end places the amount of personal humility and even tamping down normal human reactions to customer nonsense has been difficult.

If you have an attitude of servitude and a desire to make these customers have their best possible experience you'll be fine. But I caution you that fine dining attracts some real pieces of shit customers and if you are not able to rein in any impulses to respond to disrespect or rudeness it could haunt you.

It's not for everyone. I left after a couple of years at my most "prestigious" waiting job. It wasn't worth the casual abuse. The money was damn good though.
