I think I've done it again. How can I see the warning signs before taking another job?

my last boss had some kind of personality disorder. He would change plans last minute and have me drive 20 mins out of my way to meet him at a different location just so he could have a place to sit down and talk for 5 minutes before starting. also the rules of the company never applied to him, but he was never shy in correcting me. Name dropping was his thing, had to seem like he had connections to the little peon questioning him's boss. He was icky. Needless to say I quit before he could play his wild goose chase game that involved putting any possible obstacles in my way so I couldn't get the hours I was promised at the time I was hired. I've worked for N's before and it was HORRIBLE. I would be in fight or flight mode all day. So much psychological abuse happened in 7 months that I forgot any real incidents when I went to report it. One warning sign would be a lack of empathy for people "beneath them", or name dropping to sound important. I'm in the same boat though...I just got hired at a new job that I start next week and I'm nervous as hell that my boss is another N.
