It is hard to pass those interview processes as a starting developer.

Instead of applying you can write some blog posts, improve your github and deploy some real project clones at a mainnet etc.

Then, try speak with an individual employer you can directly talk to while you search on jobs and you don't be better by following the tutorials or building some simple projects that none uses.

If you want to really find an opportunity, try to build something what others can use also and include blog post, deployment and then document all process and share it with others.

There is no easy path to find the first job and these blockchain techs involve a lot of money, you should show them something that can impress them first and those are not built in a short time.
