Vegan Baked Feta Pasta

Keep your expectations low tho, idk about vegan cheese in the us(assuming that where you guys are) but what we have here is very meh. It doesn’t melt right and Mozza taste closest to chedar, chedar taste like butter, parmesan taste like salt but gouda is pretty on point tho.

Money or rather the crazy ass inflation on grocery made me have to switch back to being vegetarian instead of vegan(vegan fake cheese is about 3 to 4 time the price of regular cheese here, and so is non dairy milk) and i have realized how much i missed real cheese. Beyond and impossible really need to look into making cheese, their fake meat is soooo spot on that i’m sure if anybody can figure out perfect fake cheese it’s them.

But TO BE FAIR to fake cheese, we only have 2 and a half brand here (the half is a seitan company that happens to make one cheese but it’s almost never in stock anywhere)

Before i get rock thrown at me for “abandoning veganism” the recent price hike of EVERYTHING here made us go from a pretty confortable single income household to going back to vegetarian, selling our second car and using food bank. And even with all the food they give us groceries is still costing twice what it use to a year ago when we were vegan. At some point actually having food on the table becomes the priority. Electricity almost doubled, gaz did double grocery almost tripled.. “luxury” item stayed the same mostly tho weirdly, like maybe a 100$ price hike on a 1000$ laptop but not much more than that… but the essential are bleeding us dry.
