What kind of animals & mythologies can we expect to see in this region based off of Spain/Europe?

I'm personally hoping there's a Las Plagas Pokémon ;)

In seriousness, though, I'm thinking there'll be some sort of Picasso-styled Pokémon (maybe a Porygon variant), a bull Pokémon (maybe a Tauros or Bouffalant variant), a Pokémon based on Don Quixote (It seems like Quaxly might be shaping up to be the Don Quixote to Inteleon's James Bond (come to think of it, maybe the Water starters are based on literary and mythical figures rather than weapons (Empoleon: Poseidon/Neptune, Greninja: Jiraiya, Primarina: the Little Mermaid/the Greco-Roman sirens, Inteleon: James Bond, Quaxly: Don Quixote; not exactly sure what Blastoise, Feraligatr, Swampert, and Samurott reference)) and a windmill, Pokémon with some sort of Aztec/Mayan/Olmec/some sort of other Mexican influence (after all, Galar had the India-influenced Copperajah and Cufant), and the titles of the games have me thinking the main legendaries are going to be based on infrared and ultraviolet, with the third trio member representing visible light and possibly a third "Rainbow" version. Following off of that, maybe they'll introduce a Light type, especially considering that the last time they introduced a type, it was in Kalos, and not only (assuming the Pokéverse's Earth roughly lines up geographically with the real world) is that region right next door, but the type introduced was the Fairy type, which is almost a Light type.
