I want to build a mechanical keyboard, but I don't know where to start

This is the cheapest decent kit I know of, £50.44 with a bunch of options for plate and LED colour, including everything but keycaps. But with a super cheap plastic case.

The 'CNC Milk Case' as they call it (frosted acrylic) would be a lot nicer, I have a very similar one and it's pretty sturdy.. Bumps the price up to 60. This is where I'd actually say it starts becoming a decent keyboard.

If you don't need anything but a standard ANSI layout, this would be a decent option I think. It also uses bootmapper client, so remapping keys is done with a more user friendly interface than most.
