Old school geometry hardtail 29er, 1x12 (or 1x11) drivetrain, swap in a Surly Krampus fork and store the suspension fork, throw on some Surly ET 29x2.5 tires or 29x2.35 Big Apples, put on Jones bars or trekking bars and a whole set of Apidura or Revelate bikepacking bags.

Or do similar with a 700x40c gravel bike. Soma Condor II bars, Ergotec High Charisma stem, tubeless gravel folding bead tires, 1x11/12 drivetrain (w/ bar end shifter hacked to shift 1x12), full set of bikepacking bags and look through Blue Lug's global website.

Maybe make a Porteur out of a Surly Pack Rat or SOMA Randonneur frame? All classic silver Rene Herse components, Surly demi-porteur rack w/ overpriced big Surly bag for it, Paul cantis, Nitto or VO bars and a (shock, horror) non-leather saddle.
