Started a baby account for fun during the event. Just hiked a couple pokestop/pokemon rich trails with the PoGo+ doing all the work. Took it two two raids and dropped a couple lucky eggs the game was throwing at me for clearing levels. End result was level 20 after two hikes and two raids in two days without any actual grinding at all. 100K stardust and an Entei.

Popped eggs along the hikes - one 96% Lapras and a 93% Snorlax, also 4 Chansey (instant gym defenders).

I thought about what would be the simplest tough attackers to target for a now level 22 account against Entei, and the answer is easy again - Rhydon. Rhyhorn are everywhere here and you only need 50 candy to evolve.

So here is my new baby account attacking lineup after 6 days, that would have been four or five times as long when the game started out, considering that the PoGo+ has done all the "grinding". Still have 111K stardust.
