Ok... so hear me out. After college, I had long period where I had to try stuff out that I wanted to do for years. This involved building and launching an app, developing and manufacturing some circuits, trying business projects, etc.

I feel like you're coming from a similar place. However, you're probably going to have to get most of those things out of your system on your own over time.... That said, see what projects the school is recommending. Pay special attention to what projects are being sponsored by companies. Some of those might be things that are actually needed in industry. I'd recommend paying attention to those and having an open mind to try to join one of those teams.
