I want to build a professional bag studio…What do I need?

The company that went out of business is a Covid casualty. They re-did interiors in private jets (upholstery, carpet, woodwork, etc.) and were doing just fine. Very high-dollar market. When Covid hit, that market hit $0 and stayed at $0 for a loooong time. Probably still there. Why would rich people upgrade a jet that they can't fly anywhere?

They tried to transition to contract sewing to keep the doors open, but it's a very different business from what they knew, and it didn't work out (and it isn't what they wanted to be doing anyway).

That's why the shop looks so clean, their original clientele was the super-rich, basically. Gotta sell the image.
