But I don't think it's enough to answer if he survived or not. why would the mind, if hallucinating, concentrate on something so minute, especially given that Emerald rarely, if ever, paid much attention to the movement and behavior and sheer physicality of the horses her brother was training? We're talking about a scene in the movie and not her actual perception. Also I'm not saying she was hallucinating but she was still grieving her brother who apparently just died and she was seeing what she wanted to see, him still alive. Also this part you wrote.
