I actually got it to download

So on this page https://education.minecraft.net/get-started/ you can put your edu/education email in. I used my university email address and from there I was 'eligable' to download and install from the microsoft store (which means you have to be on Windows 10 to do this)

After waiting a few minutes for download completion, you open the game and have to sign in. BUT since my university doesn't have a minecraft education edition license setup, I only get 10 trials of Education Edition before I can't play it again.

The solution to that is, I think you can buy one license for yourself here https://educationstore.microsoft.com/en-us/store/details/product/9nblggh4r2r6 for 5USD per year , per person.

Another way to play education edition is to play on the mobile versions of Minecraft (aka Bedrock Edition), it has an education edition which I found and played the other day, and doesn't seem to have any trials of any sorts.
