Also, mushrooms do not simply uptake elements of their environment which may be toxic to humans. Fungi posses enzyme sets frequently capable of degrading many compounds we consider worrisome. Most of the agri and industrial chemicals people tend to worry about tend to be hydrocarbon based - which some fungi have no problem with.
