So frustrated that I can't successfully do 23:1! How to get over the hurdle?

You won't like it but the mistake I see you do is not eating until you're full. You're doing omad but you seem to be too preoccupied with calories. I'm from Dr. Fung school of Intermittent fasting. I don't count calories but I extend my fasting windows to 30-48hours to break plateaus and accelerate weight loss.

Not eating until your full, sends the wrong signals to your body. Bad hormonal responses. Bad effects on your satiety and hunger hormones. If you eat until you're full you may eat too much depending on your diet. That's why you must allow the possibility of doing extended fasting of 30-48 hours from time to time. Let's say once or twice a week.

Sure you can eat what you want but it's better to health healthy. You have one meal and you must get all the nutrients and vitamins your body needs for the day. I eat meat, vegetables, healthy oils, cheese, milk, eggs, etc. Now only about 1/3 of my plates are made of carbs like pasta, rice and millet. Try to avoid sugar added food and fruit juices. They spike insulin level and mess with satiety and hunger hormones. Eat more unprocessed foods like meat, vegetables, etc. I lost more than 70lbs in a few months doing this (without much anything else). The real secret of Intermittent fasting is the way it deals with the various food hormones in the body insulin, insulin resistance, hunger and satiety hormones, etc when you do it right (no snacking!!, eat until your full, black coffee/tea allowed).
