Good tasting canned veggies

If you add canned veggies to things like soups or casseroles the taste and texture difference isn’t quite so noticeable. I’m not a huge fan of the “canned” flavor and texture personally so when I buy canned veggies it’s usually for things like tomatoes, diced chilies and corn. If you can things yourself you have a lot more flexibility in terms of flavor and variety and it’s a very satisfying hobby (but it is tricky to learn how to do and can take a lot of work). If you get a chance you could check out r/canning, which is a great resource and has a lot of really knowledgeable people who could help you get started. Be aware though, right now at the height of both the gardening/harvest season and the pandemic canning supplies are kind of hard to come by in a lot of places. Even if you look online a lot of things are backordered.
