You can do that, but rocksmith really shines as an electric guitar game. Even if you just get a cheapie to start.

Electrics are a much shorter learning curve, since they generally have way lighter strings. People will tell you you need to build up strength, but I feel that’s the same as telling a kid to go to the gym and put max weights on the bench press. Sure, you can muscle through it, but it’s going to hurt way more and you’re unlikely to enjoy it as much.

I would argue it’s best to start with lighter load. Gently does it.

Unless of course your long term goal is acoustic, in which case yeh go nuts with pickups etc.

My 2c after doing the heavy string roundabout for years until I realised it was counterproductive and limiting the amount of time I spent practicing, especially since all the music I liked was electric guitar based.
