My homemade chicken sandwich with bacon, avocado, a fried egg and chipotle mayo!

Chicken Sandwich Recipe: Makes 2-3 Sandwiches

What you'll need:

3 Brioche Buns 2 Eggs, whisked 2-3 Eggs For Sandwich 3/4 Cup Flour 1 Teaspoon Salt 1 Teaspoon Pepper 1/2 lb of Pounded Chicken Cutlets 1/2 lb bacon Miso Mayo 2 Avocados (1/2 Avocado per sandwich) 1 Cup Oil

Directions:

Heat your oven to 400 Degrees. In a large pan, such as a skillet, place 1 cup of oil (or enough to cover the entire bottom of the pan with 1/2 inch of oil). Heat the pan. While the oil begins to heat, add the flour together in a bowl with the salt and pepper. In a separate bowl, add two eggs and whisk until the yolk is blended with the white of the egg.

Next, bread the chicken by dipping it in the eggs, then coating it with the flour mixture. Once it is fully coated, drop it in your hot oil (I recommend covering the pan as well so that your oil doesn't pop up while cooking). Cook for 2-3 minutes per side until golden brown. Larger chicken pieces will cook longer. Check with a knife to make sure the chicken is fully cooked inside. Do this for the remainder of your chicken slices.

While your chicken is cooking, prep the bacon. On a baking pan, place some tinfoil over the pan (this helps to cleanup). Place your pieces of bacon on the tinfoil. I also use a roasting rack that I found cooks it even better, if you own one. Put the bacon in the oven and set the timer for 15 minutes. Check after 15 minutes and cook until the bacon is golden brown.

While you're cooking your bacon and chicken, slice your brioche bread. Put some oil or butter on a pan, whatever you prefer, and cook the sliced sides until golden brown. Slice the avocado in half, and then create small slices for the sandwich.

Upon completion of the bacon, chicken, bread and slicing of the avocado, get your three eggs. One by one, crack them into a large oiled or buttered greased pan and cook until golden brown, flipping them (but try not to break the yolk!). Only cook for a short amount of time once flipped (you also don't need to do this if you want sunny side up). Throw some chipotle mayo on your bottom slice of your bread, add the chicken, bacon, egg and avocado, and there you go!
